Banana Pudding Pound Cake Recipe

This cake is a delight! The pudding mix brings moisture and delightful banana flavor, while the mashed and sliced bananas add a melt-in-your-mouth texture and even more moistness!

Ingredients:

Cake:

  • 1 cup (2 sticks) softened unsalted butter
  • 2 cups sugar
  • 5 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • One packet (3.4 ounces) of instant pudding mix with banana cream.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 mashed bananas
  • 2 thinly sliced bananas

Icing:

  • 1–1/2 cups powdered sugar
  • 2 tablespoons whole milk

Instructions:

  1. Preheat oven to 350°F. Grease and flour a round tube pan.
  2. In a mixer, beat butter and sugar until smooth. Add eggs one by one, then mix in milk and vanilla.
  3. Mix the flour, custard mix, baking powder and salt in an other basin. Add gradually to wet mixture.
  4. Stir in mashed and sliced bananas.
  5. Spread batter into prepared pan. In order for a toothpick to come out clean, bake for 60 to 75 minutes.
  6. After allowing it to cool for ten minutes, move it to a wire rack to finish cooling.
  7. For the icing, whisk powdered sugar and milk until smooth and drizzling consistency.
  8. Drizzle icing over cooled cake and garnish with more banana slices if desired. Enjoy!

Notes:

  • To facilitate mixing, make sure the butter has melted to room temperature.
  • For the finest flavour and texture in the cake, use ripe bananas.
  • Be careful not to overmix the batter; just combine until ingredients are incorporated to avoid a dense cake.
  • Adjust baking time if necessary; oven temperatures may vary.
  • Let the cake cool in the pan for 10 minutes before removing to prevent sticking.
